Pumpkin Bread (Gluten-Free)

I baked it in my Breadman bread machine (available in my store) but you could also bake it in a conventional oven. Just be sure it bakes long enough- I'm guessing, about 50 minutes up to an hour at 350 degrees F. This is a large loaf.

Add to the bread machine:

1 cup packed organic light brown sugar
4 tablespoons pure maple syrup
1/4 cup light olive oil
1 tablespoon Ener-G Egg Replacer whisked with 1/4 cup warm water (or two large eggs, beaten)

Flourless Chocolate Cake w/ Chocolate Glaze (GF)

12 ounces bittersweet chocolate chips or bittersweet chocolate, roughly chopped
1 cup (2 sticks) plus 3 tablespoons butter, cut into chunks
1 1/4 cups sugar
6 eggs
1 cup unsweetened cocoa powder
1 tablespoon milk
1 tablespoon honey
1/4 teaspoon gluten-free vanilla extract

Preheat oven to 375°F. Spray a 9-inch springform pan with nonstick cooking spray, then line the bottom with a circle of parchment paper. Spray the paper with cooking spray, too, then set the pan aside.

Peanut Butter Chocolate-Chip Brownies (GF)

Non-stick cooking spray or vegetable oil for the baking pan

1 1/4 cups firmly packed organic light brown sugar
3/4 cup peanut butter- smooth or chunky
1/4 cup unsalted softened butter
2 large happy organic free-range eggs or Enger-G Egg Replacer
1- 1/2 cups GF self-rising flour such as Pamela's Ultimate Baking Mix
2 teaspoons vanilla extract

1/2 cup olive oil
3/4 cup pumpkin puree
3/4 cup organic light brown sugar
1 teaspoon vanilla extract
1 teaspoon cinnamon
1 teaspoon Pumpkin Pie Spice
1 cup organic stone ground cornmeal
1 cup Pamela's Ultimate Baking mix or gluten-free pancake and baking mix

Beef & Potato Stew w/ Chocolate

I cook my stew in a Crock-Pot, and it's so yummy and makes the house smell amazing.

4 nice pieces of sirloin
Sea salt

Extra virgin olive oil
5 cloves garlic, chopped
1 onion, diced
4 gold or red potatoes, peeled, sliced
3 carrots, peeled, sliced
2 celery stalks, sliced
1/2 cup red table wine

Pumpkin Soup

4 tablespoons unsalted butter
2 medium yellow onions, chopped
2 teaspoons minced garlic
2 teaspoons curry powder
1/2 teaspoon ground coriander
1/2 teaspoon cayenne pepper
3 (15 oz) cans 100 percent pumpkin or 6 cups of chopped roasted pumpkin
5 cups of organic vegetable broth
2 cups of milk (I have used soy, since that's usually what I have, just make sure it's plain soy)
